6 small carrots 3-4 c shreaded
4 stalks celery 1 c finely chopped
1 c raisins
Simple “Mayo” Sauce
1 c cashews, soaked 2 hours or more
2 Tbsp lemon juice
1 Tbsp apple cider vinegar
1 Tbsp olive oil 1/2 tsp salt

Place all sauce ingredients in blender and process until smooth.
Add about 3/4 of the sauce and mix well, then decide if you want to add the rest of not.
*This recipe can easily be spiced up by adding some cinnamon, ginger or chipolte and cumin.
