1 large cucumber, sliced thin

1/2 a small onion, sliced thin

1 small handful fresh mint, chopped



Juice from 1 lemon

1 tsp olive oil

1/2 tsp apple cider vinegar

1 tsp agave or sweetener of choice

Salt and pepper to taste

Whisk dressing ingredients together and pour over salad, mix well.

Let sit for 10-15 minutes to allow cucumbers to soften and absorb flavors.
