1 avocado, cubed
1 c diced red pepper
1/2 medium onion, diced
1 medium garlic clove minced
1/2 c cilantro, chopped
2 Tbsp fresh lemon or lime juice
1 Tbsp olive oil
1 tsp apple cider vinegar
Salt, Black Pepper, Cayenne and Chipotle to taste
Cut corn from cob and place in hot water while you prepare the other ingredients.
Drain corn and place with the rest of the ingredients in bowl, mix well and enjoy!
