  • 1 cup soaked almonds
  • 2 Tbsp peeled minced ginger
  • 1/4 cup fresh lemon juice
  • 2 Tbsp tamari
  • 1 Tbsp olive oil
  • 4 cloves garlic 1 Tbsp chili powder
  • 1/4 cup maple syrup
  • 1/2 cup water
  • 1/4 tsp salt


  • 1/2 bunch kale, chopped
  • 4 carrots shredded
  • 3 zucchini shredded or spiralized
  • 1 red pepper
  • *optional – nuts or seeds as garnish



pad thai saladPlace all sauce ingredients in blender and process until smooth, adding water as needed.
Toss salad ingredients and pour sauce over top. Mix well and serve with slices of red pepper on top as garnish, along with optional nuts or seeds.
